If I order the RS232 option now, is it easy enough for you guys to send me the CAN or RS485 later down the road and I would (re)solder it in?

Yes, as it's literally an isolated comm module soldered on a board. Double-sided board, so it won't be the easiest thing to desolder...but it can be done.
